Watch any wedding buffet in Dehradun and you will notice the same thing: the longest, happiest queue is never at the main course. It is at the chaat counter — three cousins competing over golgappa counts, an aunty giving the tikki wala very specific instructions, someone’s grandfather asking for "thoda aur teekha." That corner is what we build. It is our signature service, and honestly, the reason many clients find us in the first place.
What Is On the Counter
A standard setup runs six to eight items, made fresh in front of your guests: golgappa with flavoured pani — pudina, hing, lemon, garlic and jaljeera; aloo tikki off a hot tawa; papdi chaat and dahi bhalla assembled to order; bhel puri; and raj kachori for the ones who came prepared. Want to add or swap items — matka chaat, sev puri, dahi puri? The counter is built around your menu, not the other way round.
Hygiene First, Because Chaat Has a Reputation
Street chaat is loved and feared for the same reason — the water. Ours is different by design: all pani for golgappa is made with RO-filtered water, chutneys and dahi come from our own FSSAI-registered kitchen, everything is served in disposables or crockery per your preference, and staff work in gloves and uniforms behind a covered, lit counter. Guests get street-style taste with home-style safety — that combination is exactly why this counter gets rebooked.
Setup, Staff and How It Runs
We arrive two to three hours before serving time with the full counter — decorated stall, lighting, serving equipment and stock. Two trained staff run a standard counter and can comfortably serve 100–150 guests over an evening; for bigger functions we add counters and staff so nobody stands in line watching golgappas from a distance. The stall decor is matched to your function — vibrant and traditional for a mehendi, clean and elegant for a corporate do.
Which Events It Works For
Weddings and receptions, where it runs all evening. Mehendi and haldi functions, where it is the catering. Birthday parties, where it quietly becomes the parents’ corner. Office parties and Diwali celebrations, kitty parties, society events. It can headline a small function alone or slot into a full catering package — many families pair it with the mocktail counter, because teekha golgappa and a cold virgin mojito is a combination with no known enemies.
Based in Dehradun, Happy to Travel
Most of our chaat counters serve functions across Dehradun — Rajpur Road, Vasant Vihar, Sahastradhara Road, Prem Nagar, Clement Town and the Mussoorie Road resorts. We also regularly take bookings in Haridwar, Rishikesh, Roorkee and Saharanpur, and travel further across North India for larger events. If your function is outside Dehradun, ask — the counter is more portable than you would think.
Live Chaat Counter vs Regular Catering: Which Do You Need?
Honest answer: they do different jobs. Regular catering feeds your guests; a live counter feeds and entertains them. For smaller functions — a mehendi, a kitty party, a birthday at home — a chaat counter alone often is the catering, and it costs noticeably less than a full buffet for the same crowd.
For weddings, the counter is not a replacement but a multiplier: it pulls the crowd away from the buffet queue, keeps early guests happy during the long gap before the baraat arrives, and gives the function its most photographed corner. Per guest, adding a chaat counter usually costs less than adding three more dishes to the buffet — and gets talked about ten times more.
Quantity Planning: The Counter Never Runs Dry
The average guest eats more chaat than anyone budgets for — six to eight golgappas is normal, and there is always one group of cousins operating in the twenties. We plan stock per guest, item by item, with roughly a 20% buffer on top, because a chaat counter that goes empty at 8:30 p.m. is worse than no counter at all. Whatever stock remains after the function stays with you.
Why This Became Our Signature
We added our first chaat counter to a client’s mehendi years ago as an experiment, and the golgappa queue outlasted the DJ. The equipment is our own, the recipes have been tuned over hundreds of functions, and the core counter team has been with us for years — which is why the tikki at your event tastes the same as the one that made your friend book us in the first place.
Answers Before You Book
Three things decide it: number of items, guest count and travel distance. Share those and you will have an exact quote the same day you enquire — and the number we quote is the number you pay.
Six to eight items is the sweet spot for variety without waste. Fewer for a small do, more for a big wedding — the menu is finalised with you before booking.
Yes — this is the question we love. All pani is prepared with RO-filtered water in our own kitchen, never sourced loose. It is the foundation of this service.
One counter with two staff serves 100–150 guests comfortably. Beyond that we add a second counter so the queue never becomes the event.
Four to five days’ notice is usually enough; wedding-season Saturdays deserve more. And yes — chaat plus mocktail is our most-booked combination, and combining them saves on setup cost.
